Broccolini, Cremini and Sausage Breakfast Bake - Keto

If you're new to the Keto diet, you might have woken up thinking, "What will I eat?"  We hope this Keto Breakfast Bake becomes one of your go-tos. Many people load up on the carbs most mornings, but it's not the only nor the best way to start the day. 

Uprising Superfood Bread is a much more sensible balance of fiber, protein, and fat to give you energy. Luckily, it also has no added sugar and only two net carbs, making it suitable for paleo and keto diets. After that, it's just about rounding out the meal with healthy vegetables and proteins and digging in. This one, you can even prepare ahead and bake in the morning. It has broccolini, cremini mushrooms, Italian sausage, and red peppers. 


1 head broccolini

1 red bell pepper

1 basket cremini mushrooms

1 red onion

1/2 pound sweet or spicy Italian sausage

4 oz butter

1 bunch parsley 

1 bunch chives

1 clove garlic

Salt and pepper

Olive oil

6 eggs


  1. Prep the ingredients

Preheat the oven to 350 degrees and cut the broccolini into 1-inch sections. Dice the red pepper and the red onion and slice the cremini mushrooms. Mince the garlic, chives, and parsley together and mix them with the butter. Uncase the sausage and set it aside.

  1. Get cooking.

Brown the sausage in a little olive oil using a heavy-bottomed oven-safe pan, being sure to cook it through and let it brown. A cast-iron or enamel skillet will work well. When it's nearly done, add in the red peppers and red onion and transfer to a bowl. Now, sautee the mushrooms and broccolini in the fat from the sausage until the broccolini is bright but still fairly firm. Add the rest of the ingredients back into the pan. 

  1. Prepare the pan

Spread each slice of Superfood Bread with a generous amount of the compound butter and cut them each twice diagonally, making 4 little triangles. Nestle these into the veggies and sausage and crack the 6 eggs over the top, each in its own little space when possible and preserving the yolks as best you can.

  1. Bake it off

Move the whole pan into the oven and bake until the eggs are done to your liking. It should take 12-15 minutes to see soft runny yolks without runny whites. This dish is an all in one, so pull out a trivet and bring the whole skillet to the table and impress your friends with this Keto brunch specialty.
