Cardamom-Orange Bread Pudding
With so many delicious bread pudding recipes around the world, we decided to put our hat in the ring with a unique twist. Ours is scented with orange, cardamom, and cinnamon and made from our artisan-baked Uprising Superfood Bread. Uprising Bread is keto-friendly and made of just a few simple ingredients—almonds, flax seeds, psyllium husk, apple cider vinegar, egg whites and salt. With just 2 net carbs and has no added sugar, this bread pudding will fit with any diet. When baking a cake seems too daunting, this is a guilt-free dessert that's sure to please.
1 cup whole milk
1 cup half and half
2 eggs
3/4 c turbinado sugar
1 tbsp vanilla extract
1/2 tsp cardamom
1/2 tsp cinnamon
Zest from 1 orange
1/2 cup golden raisins
Pinch of salt
3 tbsp butter
- Prepare the custard
Preset the oven to 350 degrees. In a large bowl, whisk the eggs, milk, and half and half until totally combined. Next, whisk in the sugar, vanilla, cardamom, cinnamon, orange zest, and salt until the sugar is dissolved.
- Combine your ingredients
Add the custard to the dried bread cubes and fold in the raisins. Allow it to sit for 15-20 minutes until the custard is absorbed into the bread
- Prepare the casserole
Fold the mixture together once more (it's ok if the bread cubes break down a little bit) and pour the mixture into a greased casserole. Dice the butter and distribute it over the top. Sprinkle with some more turbinado sugar if desired.
- Bake
Bake the bread pudding until set, about 35 minutes or until a toothpick inserted into the center comes out clean. Serve warm.
