The ultimate chicken club sandwich recipe

We know what you’re thinking: How in the world can a chicken club sandwich be low-carb? Just one slice of traditional white bread is enough to throw someone out of ketosis. Well, if you follow our recipe, not only will you find that this sandwich is out-of-this-world, but you’ll also see that it is extremely low carb and approved for keto and paleo diets. Slices of delicious chicken breast and mouth-watering bacon are hugged between two slices of  Uprising Bread—a gluten-free bread with zero added sugar that’s artisan baked with just 2 net carbs. This sandwich is perfect for any occasion. 

6 slices of chicken breast

4 slices of uncured bacon

3 slices Uprising Bread

2 slices cheese of choice

2 thin sliced vine ripe tomatoes

¼ medium avocado, mashed

6 leaves of butter leaf lettuce 

2 tbsp alfalfa sprouts

2 tbsp prepared mayo

1 tbsp dijon mustard

1 tsp garlic powder

1 tsp dried basil

1 tsp dried oregano

½ tsp smoked paprika

Salt and pepper to taste

  1. Bring saute pan up to medium-high heat, then add a small splash of oil to the pan. While bacon is cooking, toast 3 pieces of Uprising Bread in the oven or toaster oven. Fry bacon until crisp. Usually 2 to 3 minutes on each side. Set aside for use later.
  2. In a medium-size mixing bowl, mix together; mayo, dijon mustard, garlic powder, basil, oregano, smoked paprika, then salt and pepper to taste. Mix until all ingredients are thoroughly combined. In a separate small bowl, lightly mash the avocado, salt, and pepper to taste. When mixing the avocado, be sure to leave a few decent chunks to bite into. Slice tomato into thin slices and set aside.
  3. To assemble, place Uprising Bread toasted side down, then spread your mayo mixture on both sides of Uprising Bread. On one side top with chicken breast, cheese, lettuce, and tomato. On the opposite side, spread avocado mash and top with alfalfa sprouts. Skewer if you so desire and serve with your favorite keto side dish!
