Classic Breakfast Casserole with Uprising Toast Soldiers
With classic breakfast ingredients like thyme, sage, sausage, peppers, and onions, this easy breakfast bake will be an excellent filling start for a big day. 10 oz breakfast sausage
1 red bell pepper
1 green bell pepper
1 large yellow onion
A few sprigs of thyme
A few leaves of Sage
4 Tbsp butter
4 eggs
1 cup milk
Salt and pepper to taste
- Prep the ingredients
Preheat the oven to 365 degrees and start by prepping the fresh vegetables. Dice the peppers and onions to a medium size. Pick the thyme and roughly chop the sage. Whisk together the eggs and milk and season them liberally with salt and pepper. Take the sausage meat from the casings and set it aside.
- Cook the sausage and vegetables.
Bring a frying pan to medium-high heat and brown the sausage crumbles until cooked through and beginning to caramelize. Remove and set aside, leaving the drippings in the pan. Add the diced vegetables and saute until soft and beginning to gain color, adding a little butter if necessary to keep the saute moving. You can also add a little water to lift the fond from the pan and allow its flavor to combine with the vegetables. When they're close to done, season them to taste with salt and pepper and stir in the picked herbs.
- Assemble the casserole
Add the sausage back into the vegetables and remove from the heat to a large bowl. Add the bread immediately and toss everything together so that the steam and moisture from the sautee can begin hydrating the Superfood Bread. Pour the whole mixture into a greased glass casserole dish. Anything that fits it will suit, but the ideal size would be a typical 8x13 casserole. Drizzle the egg mixture over the casserole and allow to sit for 15 minutes.

After the 15 minutes, fold the mixture once more and place it in the oven. It should be done in 25-30 minutes, or when a toothpick inserted in the center comes out clean (all egg is cooked). Serve the casserole warm, and enjoy!
