French Toast Casserole

4 large eggs
8-10 slices of Uprising Bread
1 cup half and half
1 cup milk
1 tsp vanilla
1 tsp cinnamon
2 tbsp maple syrup
2 tbsp butter
pinch of salt
1 cup blackberries
2 tbsp powdered sugar (optional)
- Prep the custard and bread
Preheat the oven to 350 degrees and butter an 8x13 casserole. Whisk the eggs, milk, and half and half in with the maple syrup, cinnamon, and vanilla.
- Soak the bread and put the casserole together.
Arrange the bread squares in a casserole and pour the custard over them, slowly and making sure to cover them all. Where necessary, squeeze and fold the mixture so that all of the bread gets to soak up the custard. Allow it to rest for 10 minutes.
- Bake the casserole
Bake in the oven for 25-35 minutes or until a toothpick inserted in the center comes out clean—this means all the egg has cooked.
- Decorate and serve
Dress the casserole with blackberries and powdered sugar and serve warm.
