Sourdough vs Uprising Food

Sourdough bread has been around for thousands of years. Uprising Food? Well… maybe not quite as long as that. But we’ll work on it.

What is Sourdough Bread?

As one of the oldest recorded forms of bread, sourdough bread can trace its roots to many early civilizations including ancient Egypt. 

Like many kinds of bread, sourdough bread is created from a starter of flour and water. The combination uses lactic acid bacteria and a wild yeast as the only leavening agents. Both the lactic acid bacteria and yeast naturally occur in the dough and don’t need to be added in, although some companies add more. 

As the grain ferments, it creates gases that give the starter dough its rise. The process of fermentation and rising nearly always takes a particularly long time for sourdough. During the rise, the sugar in the dough also ferments and gives the sourdough starter its famous “sour” taste. 


Should You Eat Sourdough Bread?

In the process of finding your favorite bread to be a staple in your household, you will likely try a variety of different bread variations. Sourdough has been regaining popularity as of late, thanks to its unique taste, supple texture, and crispy crust.

But is it good for you?


The Pros of Sourdough Bread

The nutritional content of sourdough bread is about the same as what you’d find in other kinds of bread. However, when made with whole grains, sourdough bread has a few defining healthy characteristics. 

The long fermenting process creates prebiotics, which makes sourdough a beneficial bread for your GI tract. Plus, sourdough’s naturally low phytate levels make for easier mineral absorption. 

Sourdough bread also has less gluten than other types of bread and is therefore lower in FODMAPS.

While FODMAPS can be beneficial to GI health for those who can tolerate it, most people have a hard time with it and end up with digestive discomfort like bloating and gas. So, choosing food with lower FODMAPS makes the digestion process easier for many, especially for those with sensitive GI systems or issues like IBS. 


The Cons of Sourdough Bread

As with all bread, some types of sourdough can be unhealthy. Added sugars in sourdough breads increase the carbohydrate and calorie counts, which may not be what you’re looking for in your bread. 

Additionally, although sourdough bread is lower in gluten, people who have gluten intolerances or other digestive issues should still stay away as it can still cause a comparable inflammatory response to higher gluten breads.


What To Look For in the Sourdough Bread You Buy

This is especially important for sourdough bread, considering how its re-emerging popularity is causing more companies to make it in a non-traditional way just so they can catch the trend. But cutting corners in sourdough strips away a lot of the health benefits that traditional sourdough offers. 

> Avoid bleached or refined flours

Bleached and refined flours are usually stripped of vital nutrients from grains during the creation process. That means that you won’t be getting any of the nutritional benefits from the bread you’re eating. 

> Added sugar

Natural sugars that often exist in bread are fine for consumption, as sugar is not an unusual ingredient to include in bread. 

However, added sugar, be it refined or raw, isn’t ideal for a healthy bread choice. When looking at a label, make sure that there are, at most, only a few grams of sugar per piece of bread in the loaf. Any more than that is just plain unnecessary.

Whole grain, rye, and spelt are all good choices as your sourdough’s flour base. 

Whole grain is one of the most nutritious flour choices and has high fiber, making it easier for you to absorb nutrients and aid gut health than it would be for other flour types. Spelt has a relatively low gluten count, but a high vitamin count for flour. Rye, like whole grain, also has high nutrition levels and fiber counts for flour.
