Uprising Pineapple Casserole
Pineapple casserole is a unique Southern dish. This one is made with pineapples, sharp cheddar cheese, and features a buttery crust made from Uprising Bread. It may be the healthiest pineapple casserole ever attempted! It's gluten-free and grain-free for those with sensitivities, and you don’t have to sacrifice taste. The Uprising Bread also brings some fiber and protein to this dish, with its eight simple ingredients, including almond, psyllium, and flax.
2 large cans of diced pineapple, drained
1 1/3 cups turbinado sugar
5 tbsp gluten-free flour (rice or tapioca works well here)
1 cup shredded cheddar cheese
4 tbsp butter, melted
4 slices of Uprising Bread
- Prepare the crumb topping
Preheat the oven to 350 degrees. In a mixing bowl, mash the Uprising Bread together with the butter and a pinch of salt. The mixture will be crumbly and doesn’t need to be totally uniform—we'll be toasting it and sprinkling it over the pineapple filling.
- Prepare the pineapple
Drain the pineapple completely and mix it with the sugar, gluten-free flour, a pinch of salt, and cheddar cheese.
- Build the dessert
In an ovenproof casserole, add the pineapple mixture and sprinkle the bread mixture over the top, being sure to cover it completely.
- Bake it off
Bake the dish for 25-30 minutes, watching that the crumble doesn’t brown too much. If it does, you can cover it with tin foil for the remainder of the bake. Watch for the pineapple filling to bubble. This will ensure that the cheese has melted and that the bake is done.
- Serve warm
This is a great potluck dish, best served warm—a wonderful treat!
