Uprising Turkey Casserole

4 slices uprising bread
1 roasted turkey breast
1 bunch asparagus
1 green pepper
1 small leek
1/2 cup heavy cream
3 tbsp butter
Grated nutmeg
4 slices Uprising Bread
Salt and pepper

- Prepare the ingredients
Preheat the oven to 350 degrees and carve the turkey into hearty slices. Dice the leeks, rinse them, and dry them. Slice the pepper and chop the asparagus into bite-sized pieces.
- Sweat the veggies
In a pan on medium heat with a bit of olive oil and butter, sweat the leeks, peppers, and asparagus until the onions are soft and the asparagus is bright and tender (but allow them to maintain a little crunch!). They'll cook further in the oven. Dice or tear the Uprising Bread into big hearty chunks
- Build the casserole
Add the turkey, the bread, and the veggies to the casserole, mixing so that the flavors combine. Grate a bit of nutmeg over the mixture and transfer it to a casserole.
- Bake
Add the cream and remaining butter over the top and season to taste. Bake the casserole for 20-25 minutes, or until everything has warmed through and most of the liquid is absorbed.
- Serve warm
Serve the casserole warm, sprinkled with fresh chopped parsley and a bit more salt, pepper, and olive oil as desired.
