Uprising Vegetable Strata

8 eggs
4 slices Uprising Bread
1 small yellow onion chopped
1/2 cup red pepper chopped small
1/2 cup frozen mixed vegetables
1/2 cup chopped sundried tomatoes
1/2 cup shredded pepper jack cheese
1/2 tbsp butter
1/2 cup milk
Salt and pepper
- Prepare the ingredients
Preheat the oven to 350 degrees. Cut the Uprising Bread into quarters and mix the eggs with the veggies, cheese, cream, salt, and pepper.
- Prepare the strata
In an oven-safe dish, add the bread and then the egg mixture, allowing it all to sit for a bit in order to let the bread soak up the flavors and moisture from the eggs
- Bake
Bake the strata in the oven for 20-25 minutes, or until the top is golden brown and the egg has cooked through.
- Serve warm
Slice the casserole into 8 equal portions and serve. Two pieces make for a hearty breakfast, and one is great with a salad on the side.
