Uprising Vegetable Strata

Egg strata is a delicious way to start the day, and this one has a great shortcut—frozen mixed veggies. It's delicious, balanced, and packed with veggies—which means it's perfect with Uprising Bread. 8 eggs

4 slices Uprising Bread

1 small yellow onion chopped 

1/2 cup red pepper chopped small

1/2 cup frozen mixed vegetables

1/2 cup chopped sundried tomatoes

1/2 cup shredded pepper jack cheese

1/2 tbsp butter

1/2 cup milk

Salt and pepper

  1. Prepare the ingredients

Preheat the oven to 350 degrees. Cut the Uprising Bread into quarters and mix the eggs with the veggies, cheese, cream, salt, and pepper.

  1. Prepare the strata

In an oven-safe dish, add the bread and then the egg mixture, allowing it all to sit for a bit in order to let the bread soak up the flavors and moisture from the eggs

  1. Bake

Bake the strata in the oven for 20-25 minutes, or until the top is golden brown and the egg has cooked through.

  1. Serve warm

Slice the casserole into 8 equal portions and serve. Two pieces make for a hearty breakfast, and one is great with a salad on the side.
