Tuna Melt - Keto Friendly and delicious

Tuna melts are, without a doubt, a delicious comfort food that is often underrated. This tuna melt is out-of-this-world and perfect for any day of the week. 


2  6 ounces cans white meat tuna packed in water, drained

2 slices Colby Jack cheese

2 slices Uprising Bread

½ avocado thinly sliced

⅓ cup prepared mayo
2 tbsp diced celery

2 tbsp diced green onion

1 tbsp diced pimentos

1 tbsp wholegrain mustard

1 tsp pickle juice

½ tsp garlic powder

¼ tsp onion powder

¼ tsp ground chipotle pepper

Salt and pepper to taste


  1. Preheat your oven to 400 degrees. In a large mixing bowl, add pickle juice, whole grain mustard, prepared mayo.
  2. Open cans of white meat tuna and drain. Add to the wet mixture. Lightly break up tuna with a fork. Add all dry seasonings, pimentos, green onion, and celery. Mix well to incorporate all seasonings evenly. Finish with salt and pepper to taste.
  3. Butter 1 side of each slice of Uprising Bread. Top the unbuttered side of bread with the desired amount of tuna and spread evenly. Then place avocado and lastly your sliced cheese atop your tuna mixture. 
  4. Top with the last piece of Uprising Bread butter side up. Bake until the cheese is melted, approximately 5 to 7 minutes, depending on the oven. Slice diagonally and enjoy!
